Grandpa’s Swedish Meatballs

Ingredients

Meatballs

  • 9 slices bread
  • 3 3/4 lbs. ground meat
  • 3/4 cup milk
  • 3 small onions
  • 3 eggs
  • 1 1/2 tablespoons salt
  • 3/4 teaspoon pepper

Gravy

  • 3/4 teaspoon ground nutmeg
  • 9 tablespoons butter
  • 9 tablespoons flour
  • 1 tablespoon sugar
  • 3 cups water
  • 3 cups light cream
  • 3 cubes bouillon

Instructions

  1. Mix meatball ingredients
  2. Form into 1-inch balls
  3. Brown meatballs in a frying pan or bake at 350°F for 25 minutes
  4. Remove from pan
  5. Make gravy, mixing all ingredients over low/medium heat until butter is smooth and there are no lumps. Using a whisk to stir is recommended.
  6. Add meatballs to the gravy, serve hot

This recipe was a family favorite when my mom’s dad would make them during holiday visits. The recipe originated with his mother who was from Sweden.

These freeze well (including the gravy) so it is common that my family triples the recipe. These are delicious on their own or served over egg noodles (recipe on the way from my dad’s side of the family).
