“What cant you do with Ro*Tel???” I quipped smugly to my lifelong phone marathon BFF one day after publishing my Queso Compuesto post (for my Taco Night recipe round-up). She, in her ever-even-keeled way, replied, “I want to read THAT blog post.”

So here we are.

Days, weeks, even months have gone by. I believe in life some assignments need to become quests, nay, obsessions. How many cans of Ro*Tel have I used since she said those haunting words back in the Spring of this year? We’re in the double digits, no doubt.

Finally, I’ve reached the revelatory moment. A recipe challenge.
