Pico de Gallo

Ingredients

  • 3- 4 tomatoes, diced small
  • 1/4 cup red or white onion, diced small
  • Juice of 1 lime or 1/2 lemon
  • 1-2 tablespoons cilantro leaves, chopped small (keep stems and remainder of your cilantro bunch for Cilantro Oil)
  • 1/2 to 1 jalapeno, chopped very small
  • 1-2 cloves garlic, chopped very small

Instructions

  1. Combine all ingredients in a bowl.
  2. Chill for an hour or so.
  3. Salt and pepper to taste (optional)
  4. Serve with tortilla chips or use in any number of Mexican dishes.
