- 3- 4 tomatoes, diced small
- 1/4 cup red or white onion, diced small
- Juice of 1 lime or 1/2 lemon
- 1-2 tablespoons cilantro leaves, chopped small (keep stems and remainder of your cilantro bunch for Cilantro Oil)
- 1/2 to 1 jalapeno, chopped very small
- 1-2 cloves garlic, chopped very small
- Combine all ingredients in a bowl.
- Chill for an hour or so.
- Salt and pepper to taste (optional)
- Serve with tortilla chips or use in any number of Mexican dishes.
