Over the years of writing this blog, an old friend of mine has been sending me photos and descriptions of his culinary adventures. He likes to cook and he’s not one to follow a recipe. When he sends pictures and descriptions of what he makes, I think, “I should feature this on my blog” because usually, the descriptions never fail to entertain. Also, he makes some dishes that I’ve tested in my kitchen, and the food is great. He often cooks with his teenage daughter, and so she influences what he decides to make.
The first “recipe” he ever sent to me was aptly called “Hobo Stew”, a hodgepodge of veggies, beans and whatever else he had in his cupboard. I am presently searching for the recipe, but as I comb through our communications, I’ve unearthed some gems including this un-edited recipe for “Pseudo Menudo & Poke Chops”.
Pseudo Menudo & Poke Chops
- 4 poke chops, bone in
- 1 big can hominy
- 1 big can enchilada sauce
- 2 cups (ish) chicken broth
- 6 cloves garlic, smashed
- 1 onion, chopped big
- Cumin (lots)
- Corriander (lots)
- Oregano (lots)
- 2 bay leaves
- Cilantro
