Snap Cook: Sausage Marinara

This is a Snap Cook* of This Dinner in my Quick & Easy Dinner section. Note that the steps with onions can be eliminated to make this a quicker dinner with less ingredients and steps.

*Snap Cook: I snap pictures of what I’m making while I’m making it, and then post them here to show you how I do it! This is for newbies or those who are visual learners. It is also for those of you who, like me, enjoy seeing the process of cooking something like thumbing through a book! I purposely do not give specific amounts of time when possible, because I know when things are ready by looking and smelling. I also avoid using technical cooking terms here for those who are new to cooking. “carmelize” or “sautee”. I’m being descriptive as a teaching tool. Your feedback is always welcome!

Chop onions, add olive oil and onions to a large flat pan with Italian spices and garlic over medium heat.
Cook on low heat until onions begin to be soft and clear with brown bits beginning to stick to the pan.
Add about 1/4 cup of water to pan and scrape the brown bits from the pan into the liquid. This is pure flavor and none should be left behind!
Simmer until liquid is reduced and the consistency is saucy, or like a glaze.
Add Sausage.

Add Marinara Sauce to Browned Sausage
Simmer at least fifteen minutes, or until pasta is ready to add. You want the sauce to be a bit thin so that the pasta finishes cooking in the sauce, and draws out some of the water.
When the pasta is quite al dente, drain the water and add the pasta to the sauce. Allow this to simmer for a few minutes while thoroughly mixing so that all of the pasta is covered in sauce in sausage is incorporated evenly.
Serve onto a plate or into a bowl and top with Parmesan cheese. Enjoy!
